It’s vibrant, refreshing, and anything but ordinary. The juicy watermelon pairs perfectly with ripe cherry tomatoes, peppery arugula, zesty lime, fresh mint, and the crunch of roasted pistachios.

Tomato-Watermelon Salad with Arugula

Makes 3 servings ⬩ Ready in 20 minutes

Ingredients

  • ½ small watermelon, diced (18oz)
2 cups arugula, spinach or mixed greens (4 oz)
  • ½ cup cherry tomatoes, halved (4 oz)
  • 2 tablespoons lime juice
  • 3 tablespoons minced fresh mint
  • ½ cup shelled pistachios, chopped
  • Freshly ground black pepper to taste

Instructions

  1. Add the watermelon, arugula, cherry tomatoes, and lime juice to a large bowl. Toss well.
  2. Chill the salad in the refrigerator for 15 minutes before serving.
  3. Plate the salad. Then sprinkle on the chopped pistachios and black pepper.
